   God I wish I could work somewhere where they collectively cared enough to keep a pan looking that nicely taken care of.

   The crust you are able to pull off on quality equipment is just sublime, excellent execution chef.

    probably not the case, but i swear i used to work in this kitchen. valentine’s day was always crazy. the first time we were ever open for a full week was the week of valentines a few years back. excellent looking scallops btw
